Gourmet Banana Pancakes (Serves Four)Whether it's a butter-'em-up breakfast in bed for your significant other, or a desire to start your day with a sweet yet satisfying treat. OW's resident gourmand, the irrepressible, Jonny B has just the thing for you - Gourmet Banana Pancakes.
Ingredients
2 Cups Self-Raising Flour
1 Egg
1/4 Cup of Sugar (Fine)
3/4 to 1 Cup of Milk (preferably at room temperature)
Dash of Vanilla
Sprinkle of Cinnamon
Garnish - Honey Ice Cream, Strawberries and Mint
Method
Step 1 - Sift flour and sugar in a large bowl, make a 'well' for the egg
Step 2 - Add egg and whisk - adding milk in 1/4 of a cup increments until the mixture is a smooth almost paint-like consistency
Step 3 - Add a small dash of vanilla
Step 4 - Heat a large frypan on a medium to high heat, or 160 degrees is using an electric pan "I personally prefer a product such as Spray & Simple over butter or oil but the choice is yours." JB
Step 5 - Place the mixture in a jug and use either the jug or a ladle to pour the mix into the pan "For the record, I reckon you get the best results (ie: light, fluffy pancakes) if you make the mixture up the night before." JB
Step 6 - Once you're set, place small slices of banana neatly on to the top of the pancake. Just as it starts to bubble carefully flip and cook for 1 minute
Serving Suggestions
Serve in a stack with Ice Cream and Berries, top with a drizzle of Honey and freshly-squeezed Lime, dust with Cinnamon - Hook In :)
